Beware of fakes!

This flour is beige in colour, with a nutty aroma, and a slightly sweet taste. It is suitable for most recipes instead of all-purpose flour. It is versatile for many types of pastry: bread, cookies, muffins, cakes, waffles, pies.

Rock cranberry spelt flour muffins

Ingredients for the recipe:

  • Spelt flour 100 g,
  • Wheat flour 150 g,
  • Kefir 2.5 % 250 g,
  • Quick-frozen rock cranberries 130 g,
  • Sugar 120 g,
  • Eggs 2 pcs,
  • Olive oil extra virgin 40 g (3 table spoons),
  • Vegetable oil 40 g (3 table spoons),
  • Vanilla sugar 10 g (1 tea spoon),
  • Leavener 10 g (1 tea spoon),
  • Salt 4 g (1/3 tea spoon),
  • Cream:
  • Cream cheese 200 g,
  • Dairy cream 33 % 100 ml
  • Sugar powder 40 g.

Cooking method:

  1. Beat eggs with sugar, add kefir, olive oil, vegetable oil, salt, vanilla sugar and leavener. Stir thoroughly.
  2. Add all the flour and frozen cranberries to the resulting mixture. Knead the dough.
  3. Oil 12 muffin molds with butter and fill them 3/4 full with dough.
  4. Bake at 220 ⁰C for 20–25 minutes.
  5. For cream, combine the cream cheese, sugar powder, dairy cream and beat thoroughly with a mixer.
  6. After baking, let the muffins cool and decorate with cream using a pastry bag.
