Corn or maize (Zea mays L.) is a kind of annual herbaceous Poaceae or Gramineae plants. This is one of the oldest cultivated plants on Earth unable to self-seed and grow in the wild. Corn originated from its wild ancestors that have not survived to this day, its homeland is Central and South America. According to the survived historical evidence, it was first grown in Mexico about 5200 BC, i.e., long before the arrival of the Spaniards.

Corn grains contain:

  • up to 70% carbohydrates: polysaccharides (mainly, starch - 62-72%, as well as fiber - 2.2%);
  • 7-20% protein;
  • fats - 4-8% (in germs - up to 40%);
  • vitamins: E (0.52 mg%), B1 (0.2 mg%), B2 (100 mg%), B6, C, K, PP, pantothenic acid, biotin, carotenoids;
  • minerals: ample potassium (283 mg%), phosphorus, magnesium; sodium, calcium, iron, etc.;
  • other bio active substances: flavonoids (quercetin, isoquercetin), phenol carboxylic acids; phytosterols.
