Bring water to a boil, shake the packets with peas and gently lower them into the water. Reduce heat and cook the peas for 30 minutes. Let cool.
2. Roast the sesame seeds on a dry pan for 1-2 minutes, mix with the coriander, the jeera (cumin) and the chili pepper. Sprinkle with olive oil and mix. Chop the green onions finely.
3 Place the peas in the blender with the mix of spices and the onions and whip into a homogeneous paste. Add the lemon juice and salt and mix.
4 Roll small balls from the mixture. Heat up enough oil in the stewpot to cover the balls. Place the balls carefully into the oil and deep fry for 3-4 minutes on all sides. Place the ready falafel onto a paper towel to absorb extra fat. Serve with sauce.
