Oriental Pasta with Yogurt

Oriental Pasta with Yogurt
6 servings

4 mid-sized onion bulbs

8 cloves of garlic

4 tbsp olive oil

1/2 tsp ground cinnamon

1/2 tsp ground coriander

a pinch of grated nutmeg

a pinch of ground cardamon

zest and juice of 1 lemon

400 g Makfa long noodles

400 g natural yogurt

3-4 sprigs of parsley

2-3 sprigs of mint

2 tsp sumac


freshly ground black pepper

20 minutes

1. Peel onion and garlic; slice onion into circles, mince garlic. Heat 3 tbsp olive oil in a saucepan, and saute onion and garlic for 12-15 minutes until caramelized. Add cinnamon, coriander, nutmeg, cardamon, lemon zest and juice, salt, and pepper. Stir and remove from heat.

2. Boil noodles in slightly salted water for 12 minutes according to the instructions on the packaging to al dente perfection. Get the pasta in a colander.

3. Place pasta in serving plates and top with onion and seasonings. Add 1-2 tbsp of yogurt at room temperature, minced parsley, mint and sumac in every plate. Drizzle the dish with the remaining olive oil and serve.
