600 g of packaged Makfa pearl barley
2 tbsp of extra virgin olive oil
100 g of roasted almonds
60 g of roasted pistachios
a bunch of cilantro
Juice of 1 lemon
1 tsp of ras-el-hanut mix
freshly ground black pepper
time 1 hour 5 minutes

1. Soak the pearl barley overnight in warm water. Next day strain the water, cover the grains with fresh water, add salt and cook for 45-50 minutes until ready.
2. Peel and cube the onions and the carrots. Heat the olive oil in a frying pan on medium heatr and fry the vegetables for 10 minutes.
3. Add the pearl barley and the nuts and continue keeping warm for a couple more minutes.
4. Ladle the salad into plates, add cut cilantro, the lemon juice and the ras-el-hanut mix. Add salt and pepper, mix and serve.
