Ingredients
6–8 servings

480 tbsp of packaged Makfa semolina

160 g of butter

180 ml of Greek yogurt

50 ml of orange juice

180 g of sugar

1 tsp of baking powder

zest of 1 orange

50 g of shelled pistachios

for the syrup:

540 g of sugar

400 ml of water

1 tbsp of lemon juice

Cooking

1. Prepare the sauce. Place the sugar into a stewpot, cover with water, add the lemon juice and bring to a boil. Reduce heat and cook for 5 minutes. Remove from heat.

2. For the harisa, mix the semolina, 140 g of butter, the yogurt, the juice, the sugar, the baking powder and the orange zest. Baste the baking form with the remaining oil, and pour in the dough.

3. Heat the oven to 180°C and bake the harisa for 30 minutes until golden. Then place the pie under the grill for a couple of minutes to make the surface golden.

4. Remove the pie from the oven and let cool. Pour the syrup on top, decorate with chopped pistachios, cut into pieces and serve.
