For the dough:

butter – 150 grams;

“Makfa” superior grade wheat flour – 250 grams;

sugar – 1 teaspoon;

1 egg yolk;

sugar powder for decoration – 10 grams;

salt.

For the filling:

3 pears;

juice from 1 lemon;

butter – 120 grams;

sugar – 130 grams;

cinnamon powder – 1/4 teaspoon.

1. Cube the butter, add flour, sugar and a pinch of salt, mix into fine crumbles. Add yolk, 1 tablespoons of ice-cold water and mix a homogeneous dough. Roll the dough up into a ball and put it into the fridge to chill for 1 hour.

2. For the filling, peel the pears, cut them into slices and sprinkle with lemon juice. In a heat-resistant pan, melt the butter, add sugar and cinnamon. Cook while stirring for several minutes until the mixture is golden caramel in color. Put the pear slices into the caramel and simmer for 5–7 minutes.

3. Roll the dough into a round sheet in the shape of the pan. Cover the pears in the pan with the dough sheet, tucking the edges inside. Pin the dough sheet with a fork, heat the oven to 190°С and bake the pie for 25–30 minutes. When ready, turn the tart over into a dish, pears facing up. Serve sprinkled with sugar powder.
