2 packets of Makfa millet in packets

170 g of flour

1 tsp of salt

2 tsp of baking powder

2 eggs

150 g of sugar

200 ml of milk

3 tbsp of olive oil

50 g of red currant

30 g of dried apricots

Cooking

1. Pour water in a saucepan, add salt and bring to a boil. Shake the packets with millet and gently lower them into the water. Reduce heat and cook the millet for 20 minutes until ready. Let cool slightly and remove the millet from the packets.

2. Mix the flour, the salt and the baking powder in a bowl. In another bowl whisk 1 egg with sugar. Slowly add milk to the olive oil. Add the millet porridge, the currant and the chopped dried apricots to the mixture (you may want to leave some for decoration). Mix well.

3. Combine the two mixtures and mix thoroughly again until homogeneous. Bear in mind that the less we mix the mixture, the fluffier the muffins will be.

4. Place the dough into 12 forms for muffins. Heat the oven to 180 °С and bake the muffins for some 40 minutes. If you want, decorate the muffins with remaining berries and dried apricots. Serve.
