Semolina Pancakes with Tofu and Raisins

Semolina Pancakes with Tofu and Raisins
2–4 servings

80 g of Makfa semolina

200 ml of milk

75 g of raisins

200 g of soft tofu cheese

40 of coconut shavings

2 tbsp of powdered sugar

3 tbsp of Makfa wheat flour

1/2 tsp of salt

1 tbsp of vegetable oil

15 minutes (+15 minutes to rest)

1. Pour the milk over the semolina and set aside for 15 minutes. Scald the raisins.

2. Add the tofu to the semolina and whisk gently in a food processor. Add the remaining ingredients and mix again. If the batter appears too thin, add 1-2 tbsp of semolina.

3. Heat the vegetable oil in a sauce pan and fry the pancakes for 3-4 minutes on each side. Serve warm.
